Quoi de si exceptionnel dans le café le plus cher au monde ?
Comme dans tout et pour tout, il y a du bon, du mauvais, du moyen, de l’exécrable et de l’exceptionnel. Aujourd’hui on va s’intéresser à la crème des crèmes du café : le Kopi Luwak. La légende voudrait qu’il n’ait pas d’amertume et un goût musqué assez doux avec des notes mélangeant des saveurs caramélisées et chocolatées. Il aurait, en plus de ça, la particularité de rester longtemps en bouche laissant un goût suave ce qui fait de lui, surtout auprès des experts : "The Best Coffee of the World".
Encore un café qui nous vient du fin fond de la jungle ?
Pas tout à fait… Oublier les plantations de cafetiers, les divers fruits et les grains qui en découlent. Le café le plus cher du monde a des originies beaucoup plus mystérieuses... Il est issu de caca... Et ce dernier est produit par un petit mammifère asiatique tout mignon, la civette. Pour la petite histoire, en indonésien, café se dit kopi et la civette se nomme Luwak, d’où son nom Kopi Luwak (on notera l’imagination et la créativité débordante pour ce soit-disant café d'exception...). Pour faire simple concernant la production, ces petites bestioles sont nourries avec les meilleurs grains possibles de base. Lors de leur processus de digestion, leur tube digestif a pour effet d’atténuer l’amertume et prodigue des arômes chocolatés et/ou caramélisés à ces graines. Alors non, ce ne sont pas des blagues. Des scientifiques avec des vrais diplômes et des blouses plus blanches que le blanc lui-même se sont penchés sur le phénomène donc… C'est comme ça et puis c'est tout ! Mais ce n'est pas fini. Une fois que le petit animal a fait sa crotte, il faut mettre les mains dans le cambouis pour retrouver les meilleurs grains (seulement 1/3 sont récoltés). Rassurez-vous, ils sont ensuite lavés, séchés puis torréfiés.
Alors oui, cela peut paraître rebutant à première vue, vous vous dites légitimement « je ne vais pas boire de la m... ». Pourtant cela vous intrigue, vous vous posez la question, comment est-ce possible, est-il si bon que cela ? Vous voulez même tenter l’expérience mais…
…C’est un café excrémement cher !
On va tout de suite poser le décor avec un prix avoisinant 1000 Euros le kilo, ça détend l'asmosphère. Et ce café étant produit en quantité limitée (300 à 600 kilos par ans), il est d’une rareté qui rend son prix astronomique. Pour ceux qui auraient raté les cours élémentaires d’économie, le mécanisme est assez simple : plus c’est rare, plus c’est long et/ou coûteux à produire et plus c’est cher. Du coup, on obtient une tasse qui est servie pour la maudique somme de 20 Euros environ dans les établissements « chics ». Et autant vous dire que ce café là, on ne l’ingurgite pas en deux gorgées au comptoir en grattant un Millionaire… Et mieux vaut ne pas le renverser.
Mais vous le savez, désormais, le café, c’est comme le vin. Plus c’est rare, plus c’est bon, plus c’est cher… Donc à vous de voir si ça en vaut la peine !
